Ice Cream Sandwich Cake

Holy incredible. The first time I tasted this outrageously delicious recipe was at a BBQ a few summers ago. Ever since then I’m anxious for any excuse to make it myself! The opportunity arose recently when I had friends over for Colleen’s birthday. Girl needed a birthday cake, right?!

Can I just say right now…SO EASY! And everyone will be fooled, thinking you slaved away creating your very own ice cream cake. Little do they know, it’s simply ice cream sandwiches!

Ice Cream Sandwich Cake

  • 24 regular ice cream sandwiches
  • 16 oz container cool whip
  • 16 oz hot fudge ice cream topping
  • 1 package Reese’s minis


Layer a 9 x 13 pan with 12 ice cream sandwiches (you may have to cut one in half to fit in the middle).


Next spread a layer of hot fudge topping on top of the ice cream sandwiches.


Then spread half of the cool whip on top of the fudge topping.


Repeat the layers again, starting with the remainder of the ice cream sandwiches topped with Hershey syrup.

And finally the rest of the cool whip.


Top with crushed Reeses (or any candy topping of your choice). Cover with plastic wrap and freeze for 5-7 hours.


If making this to take to a friend’s house or party you can us a 9×13 inch disposable aluminum pan.
